Biscuits?

Just now I was talking on the phone with my good friend Joel, when I mentioned that I was craving a bean soup. It was totally random, but there it was. The thing is, if I'm making bean soup, I'd like to make it from scratch, soaking the beans overnight and all. I wasn't up for that, and I wanted something now. How about biscuits? I took a bag of flour and started reading. It turns out I didn't have any of the ingredients listed.

I mean, who keeps buttermilk laying around in their kitchen? I didn't even have milk! So I kept reading the list: shortening, nope; milk, nope; buttermilk, of course not...butter, no; salt, AHA! I did have salt, so yes, I guess I can scratch the rest of the ingredients and use salt.

All this time I was still on the phone and he kept saying that it wouldn't work. I didn't care, I wanted my biscuits. So, I took a bowl, poured some self-rising flour into it (no sifting, who has time for sifting flour anyway?), eyeballed a reasonable amount of soy milk that I had in my fridge, some leftover margarine from a previous life and the salt.

I made batter.

At the same time I heated the oven to 450F, the temperature specified in the biscuits recipe, but I thought it was quite high for some last minute biscuits, so I didn't even follow that. I changed it to 375F.

About 10 to 15 minutes later (I didn't really count, as I said, I was on the phone) I had my biscuits. With some margarine (no butter, remember?) and honey they were almost as good as the ones you can buy from the store.

Humm! That shows how little I know about these things :)
Thanks for the tip, I'll try adding lemon juice next time I'm craving biscuits!

If you don't have buttermilk, you can use some other kind of soured milk - either add some yogurt to milk, or put lemon juice or vinegar in with the milk. You're after enough acid to activate the baking powder.
