Scrambled tofu

On any given morning, I will have a smoothie made with fresh fruit for breakfast. That allows me to start the day clean and refreshed. On the other hand, there are some days where I want something different. Something special. This is one of those days.

For no particular reason I decided to make scrambled tofu. With the way my mom taught me, it looks like scrambled eggs, tastes almost like scrambled eggs, but it's not scrambled eggs.

So, the big secret is the use of turmeric. This spice not only gives it the nice yellow color, but also has good aroma and a lot of health benefits.

To make this dish, sauté your veggies of choice (here I used onions, green peppers, and white mushrooms). Mash the tofu with the back of a fork until it's all crumbled. Add it to the pan where the vegetables are and cook for a while. Add the turmeric, salt, maybe even a little bit of soy sauce, more turmeric, and cook until it feels right.

Serve it along a few slices of whole wheat toasted bread and start the day the way you want it!

Now this would be a different breakfast. Love the addition of tumeric! And all the vegetables. We are just getting to smoothie season here...

Smoothies! I love smoothies! A friend of mine recently suggested making a smoothie out of frozen fruits and tofu. I've used soy milk in the past, but I have never tried it with tofu.
