This is one of the simplest things to make. It works perfect as a side dish, over rice, as hors d'œuvre with crackers, or just on its own. One of my favorite kitchen smells is actually onion being caramelized in butter. Whenever I smell that, I just have to grab a piece and eat it.
To tell you the truth, I don't really caramelize the onion. I still like some crunch on it, but the sweet smell more than compensates for that. Either way, to do this, just melt some butter with about a tablespoon of olive oil. When the butter is melted, add the sliced onions. Depending on your likes, you can cut it really thin, or as thick as you want: thin cooks faster, but thick has more crunch. Whatever you like.
When the onions are soft and looking almost clear, add mushrooms and cook for a few more minutes, until the mushrooms are soft.
You know, the title said "Shrooms with onions", but you can easily omit the mushrooms if you don't have them at the moment. Just do the onions, they are so good. Although the mushrooms do give the whole thing a nicer flavor, so go ahead and don't mind my indecision. No matter how you choose to do it, please enjoy.
